If you have friends popping over or just want to shake up the weekly lunch boxes, I hope we can inspire you. Plain sandwiches can get a little tired and finding food inspiration can be difficult. Dips paired with seasonal produce will make your lunchbox the talk of the office/playground!

Ingredients

Crackers

5 scoops Seed Cycle Phase 1

2 tablespoons psyllium husk

1/4 teaspoon sea salt

1 tablespoon Superb Seasoning Mix

1/2 cup water

Sea salt flakes for topping (optional)


Method

Step 1

Preheat the oven to 160 degrees fan-forced. Line a lamington tin with baking paper.

Step 2

Add all the dry ingredients to a large mixing bowl, except the salt. Stir to combine, then add the water.

Step 3

Pour the ingredients into the tin. So the crackers can be thin and even, use another piece of baking paper on top to help smooth out the ingredients. Transfer to a lined baking tray and cut into 10 equal portions.

Step 4

Cook for 30 minutes, turning after 15 minutes. Leave to cool on the tray before enjoying.

Ingredients

Liver Pate

200g free range chicken or pork liver

2 tablespoons ghee

2 medium spring onions, diced

1 apple, peeled and cubed

1 teaspoon nutmeg

1-2 garlic cloves

1 boiled egg (optional)

Salt and pepper to taste


Method

Step 1

Slice up the spring onions and apple into cubes. Peel two cloves of garlic.

Step 2

Heat a large fry-pan to a medium to low temperature, add the ghee along with the shallots and garlic, fry off. Then add the chicken/pork livers, brown both sides until lovely and caramelised. Add a teaspoon of nutmeg, pinch of salt and the diced apple. Stir to combine, cover and cook for 10 mins stirring occasionally.

Step 3

Transfer to a food processor, add a boiled egg (optional), this will help the pate to be lovely and creamy. Process until smooth. Place in an airtight container and refrigerate until cool.
