Seed + Oat Rum Balls

Ingredients

1 3/4 cups (200g) Remedy Kitchen Milled Oat Porridge

7 scoops of Seed Cycle, either Phase 1 or 2 depending on where you are in your cycle

10 dates, pitted and soaked in boiling water

1/2 cup (65g) cashew pieces or granulated peanuts

3 tablespoons cacao powder

1/2 cup (80g) sultanas

1 teaspoon vanilla bean paste

1/2 cup (145g) rice malt syrup

6 teaspoons rum

1 cup desiccated coconut


Method

Step 1


Soak the dates in boiling water for 10 - 15 mins prior to soften. Remember to remove the pit and outer skin from the dates to help create a smoother texture.

Step 2

Add the porridge and seeds to a food processor and mill for a fine consistency. Add the rest of the ingredients and pulse until the mixture comes together, forming a sticky dough.

Step 3

Dampen your hands (this will help stop the ingredients from sticking to them) before rolling into generous tablespoon sized balls. Then coat in desiccated coconut. Seal in an airtight container and refrigerate.
