  • Summer isn't complete without a seafood salad

There’s just nothing like a fresh citrus salad covered in warm, tender calamari!

For years I believed calamari was simply too tricky, something I’d leave for the experts to prepare. But, like all things, you’ll never know until you try. Here’s a simple, super healthy, and super tasty approach to calamari that got a BIG thumbs up from the hungry hordes at my house

Seed + Oat Calamari & Citrus Salad.

Ingredients — Serves 6

1-2 tubes of squid- depending on size

large bag of rocket

3 oranges, one for juicing

1 fennel

pinch of dill

Seed Cycle to garnish

1/2 cup Remedy Kitchen Superb Seasoning Mix

1/3 cup cornflour

4 slices of sourdough day old bread, processed into breadcrumbs (1/4 cup)

2 eggs

1/2 cup coconut oil

Dressing

6 tablespoons EVOO

2 tablespoons balsamic vinegar

2 tablespoons orange juice

1 tablespoon honey

salt & pepper


Method

Step 1

Place 4 slices of chopped sourdough into a food processor and blitz until you have a fine breadcrumb. Set aside.

Step 2

Prepare your salad. Wash all your fresh ingredients, cut the orange skin from 2 of the oranges then slice into segments. Slice the fennel into fine pieces. Layer the rocket first, followed by the fennel and orange segments.

Step 3

Add all the ingredients for your salad dressing into a jar, give it a good shake and set aside.

Step 4

Wash the squid, pat dry, slice in half then tenderise with a meat mallet. Then slice each half in half again. Depending on the size of the squid, cut into rectangles about 4-5cm in length.

Step 5

In a medium sized bowl, crack two eggs and whisk. In another medium sized bowl place the cornflour, Superb Seasoning Mix and breadcrumbs, stir. Coat each piece of squid in the egg mix, then the seasoning breadcrumb mix, place on a lined tray until all the squid has been coated.

Step 6

Add the coconut oil to a large frypan or pot. Heat to a medium-high temperature. Add the calamari in batches and cook for 2-3 mins. Remember to not overcook the calamari as it will become tough and chewy. Lay the calamari onto some paper towel to absorb any excess oil before adding it to your salad.

Step 7

Pour over the dressing and add Seed Cycle (depending what phase you’re in), finish by garnishing with some fresh dill.
