This salad is the first of our Nourish Bowl series and I couldn’t think of a better place to start!
You’ll never hear someone say they regret eating healthy. Bring all the right elements together and a masterpiece is created! From the fresh and crunchy salad, to the tasty chicken and warm pita bread, this little masterpiece is delish!

Ingredients:
8 chicken tenderloins (2 tenderloins per person)
3/4 cup Remedy Kitchen Superb Seasoning Mix
1 pita bread, per person
1 cos lettuce, chopped
2 cucumber, chopped
1/2 spanish onion
Parsley
Toppings:
1 scoop of Seed Cycle.
Either phase 1 or 2 depending on your cycle.
1 Avocado
Nigella seeds
Dressing:
1/4 cup EVOO
2 tablespoon balsamic vinegar
Juice of 1/2 a Lemon
Salt
Pepper
Method
Step 1
Prepare the chicken in a medium to large sized bowl, (depending on how many you are cooking for) sprinkle the seasoning mix into the bowl. Lay the chicken tenderloins into the bowl and toss until the chicken is completely covered.
There are variety of ways of cooking the chicken: pan-fry, oven, BBQ, but on this occasion, we used an air fryer… so convenient and healthy, using only minimal oil. The air fryer takes 12 minutes on 190 degrees.
If you are choosing to pan fry, cover the pan with a generous amount of oil, heat the pan on a medium to low temperature for a few minutes before adding the chicken. Cook each side for around 4 minutes, until lovely and golden.
Step 2
While the chicken is cooking it’s time to prepare the salad. Wash the lettuce and cucumber. Chop the lettuce and cucumber into bite size pieces and place into you bowl or serving platter. Thinly slice the Spanish onion and sprinkle over.
Step 3
Pop all of the dressing ingredients - extra virgin olive oil, balsamic vinegar, lemon juice, salt and pepper, into a jar and give it a good shake. Set aside.
Step 4
To toast the pita bread you can either use a grill pan or sandwich press. This will warm the pita through while giving it a lovely charred effect. Chop into triangles or whatever other shape takes your fancy!
Step 5
Once the chicken is cooked through, let it rest for a few minutes before cutting it into bite size pieces. Place over your salad, add the pita bread, avocado and Seed cycle. Finish off with a drizzle of some salad dressing!
