Ingredients
1 cup cooked black rice
1 can 425g Chickpeas
2 tablespoons of Superb Seasoning Mix
1 tablespoon EVOO
1/2 cup toasted almonds
1 cup shallots- chopped
1/2 cup mint- chopped
1 cup parsley- chopped
1 cup tomatoes- diced
1 cup cucumber- diced
Toppings:
Dressing:
1/2 cup EVOO
1/3 cup red wine vinegar
1 tablespoon honey
1 teaspoon turmeric
Salt & pepper
Method
Step 1- Rice
Cook the black rice. Rinse 1 cup of black rice and drain. Some people like to soak the rice from anywhere between 15 minutes to 2 hours. This step isn’t a must, but by pre-soaking the rice before cooking it will promote a faster cooking time.
When cooking on a stovetop you will need 3 cups of water to one cup of rice. Pop the lid on, bring to the boil. Once boiling, reduce the heat to a low simmer for 40-45mins. If you have pre-soaked the rice your cooking time will reduce to 20-30 minutes depending on how long it has been soaking. Drain excess liquid and serve.
Step 2 - Chickpeas
Rinse chickpeas in a colander under running water, pat dry and place in a bowl. Add EVOO and Superb Seasoning Mix and toss to coat the chickpeas. We’re using an air fryer for cooking the chickpeas but you can also use the oven. Set your air fryer to 160 degrees for 20 minutes. If you’re using the oven, 190 degrees, fan-forced, place on a lined baking tray for 25 minutes, shake chickpeas around on the tray and continue for a further 20-25 minutes or until they are golden brown.
Step 3- Almonds
Lightly toast almonds in a frypan.
Set aside to cool then roughly chop.
Step 4- Dressing
Mix your salad dressing and set aside.
Step 6- Salad
In a large bowl add the shallots, mint, parsley, tomatoes and cucumber. Mix the ingredients together well. Add the salad dressing and place into your serving dish, top with Seed Cycle, chickpeas and almonds.
