The perfect afternoon treat!
When creating this recipe, we wanted to go beyond the basic biscuit and create something a little more wholesome to fill that afternoon void. Not only are these sticky date sandwiches substantial in size, but they have a decadent filling that will make you feel as though you’re sitting in your favourite cafe!

Ingredients
Sandwich Mix
1/2 packet (225g) Seed Cycle Biscuit Mix
1/2 cup Remedy Kitchen Milled Oat Porridge
1/2 cup coconut oil, melted
1 egg
Sticky Date Filling
1 cup dates, pitted
1 tablespoon coconut oil
2 tablespoons raw cacao
1 tablespoon rice malt syrup
1 tablespoon left over date water
Method
Step 1
Preheat the oven to 180 degrees fan-forced.
Step 2
First step for the filling:
Place 1 cup of dates into a bowl with boiling water and set aside.
Step 3
Add all the ingredients for the sandwich mix into a bowl and stir until combined.
Step 4
Grease a cupcake tin well before adding the mix. Divide the ingredients into 14 equal amounts and press into the base.
Step 5
Cook for 12 minutes, or until lovely and golden.
Step 6
Filling:
Drain the dates (reserve the water) and add all remaining filling ingredients to a food processor and mix until smooth. If the filling is too thick add some of the reserved date water.
Step 7
Once the biscuits have cooled, add the filling to a piping bag and pipe onto one biscuit, sandwich together with a second.
