Cluckin’ Corny Tacos

Ingredients — Serves 4 (3 each)

Chicken

  • 1kg chicken tenderloins

  • 1 cup Remedy Kitchen Superb Seasoning Mix

  • 1 cup panko breadcrumbs

  • 1/4 cup EVOO

Taco Fillings

  • 12 x small wholegrain tortillas

  • 3 x corn on the cob, grilled

  • 1 x tablespoon EVOO

  • salt and pepper to season the corn

  • 2 x avocado’s 

  • 1 lime (juiced)

  • Lettuce, (I used rocket)

  • 1/2 spanish onion, finely diced 

  • 1/2 cup coriander leaves, washed and chopped

  • 1/4 cup shallots washed and finely sliced

  • Sriracha mayo 


Method

Chicken

Cut the chicken into 1/2 inch square bites. In a large bowl toss the chicken, Superb Seasoning Mix and panko. Stir well to make sure the chicken is coated evenly, then pour over the EVOO and mix again.

Air fry (I did it in 2 batches)

When placing the chicken in the air fryer be sure to leave a little space around each piece of chicken so it can cook evenly and get a nice golden crunchy edge. Cook at 200 degrees for 9 minutes. Time will vary depending on the type of air fryer you have and the size of the chicken bites. My top tip, one the cooking process has completed, take the largest piece out and cut it in half. If there’s no pink then it’s ready for eating. 

Stove Top

For those who are cooking in a frypan, add a generous coating of oil over the base and heat on a low to medium heat. You want a little sizzle to get the golden outer edge but you don’t want to burn the seasoning. Cook for 6-7 minutes, moving them around gently for an even cook. Don’t overcrowd the pan, repeat the process until all the chicken is cooked through.

Fillings

Mash avocado into a smooth paste. Stir in the lime juice.

Cut the corn from the cob, add the evoo to a grill pan, cook on a medium heat until the corn starts to char, season with salt and pepper. 

Wash the lettuce, coriander and shallots. Finely chop the coriander, spanish onion and shallots.

When entertaining you can either pre-build the taco’s before your guests arrive or make it a fun activity that you can all do around the table together!

There’s no rules when it comes to taco-ing it up, though I do have one theory… some sriracha sauce on the bottom helps the fillings glue together and a little avocado to top helps hold all the other tasty morsels in. Messy meals do create great memories.
