Strawberry Coulis

My inspiration behind this heart warming bowl are these sweet, bright red berries.

 

COOKING TIME: 10 Minutes

PREP TIME: 10 Minutes

TOTAL TIME: 20 Minutes


Ingredients

  • 500g strawberries

  • 1/2 cup coconut sugar

  • juice from one lemon


Method

Wash and cut the berries into quarters. Place the berries, coconut sugar and lemon juice into a small saucepan. Simmer over a medium to low heat, with the lid on for 10 minutes, until the berries are softened and broken down. Pour into a blender and puree until smooth.

Store in an airtight container in the fridge for up to one week. If you're in a rush you can always make this ahead of time. Having this on hand to can turn any dish into, “I’d like seconds thanks!”

Add to porridge, overnight oats, bircher muesli, chia puddings, nice cream, waffles, banana bread… etc!
