Poached Pears

Ingredients

Poaching your pears

  • 1 1/2 litres water

  • 8 pears, peeled

  • 300g rapadura sugar

  • 2 cinnamon sticks

  • 1 lemon juice

  • 1 vanilla pod, with seeds scraped out

Frying in the pan

  • add 2 tablespoons of coconut oil

  • 1/2 teaspoon cinnamon


Method

Poach

Place all the ingredients into a large saucepan. Bring to the boil, then reduce to a low simmer. Keep a close eye on this process. Cooking times will vary depending on the type of pear and size. Test with a skewer into the middle of the pear. If the pear feels soft, it’s ready. Make sure to not overcook.

Refrigerate in an airtight container in the poached liquid.

Fry

Cooking these in advance means you only have to warm them through in a frypan on a busy morning. Just drain them from the liquid, pat dry and add to a frypan with a little coconut oil and extra cinnamon!
