Bircher Chia Parfait

Ingredients — Serves 1
CHIA PUDDING
1/4 cup chia seeds
1 cup almond milk, or milk of your choice
2 teaspoons maple syrup
1 teaspoon Unicorn Superfoods Blue Spirulina, a fun pop of colour with health benefits galore!
pinch of salt, optional
BIRCHER MUESLI
1/4 cup Remedy Kitchen Omega Porridge
1/4 cup coconut yoghurt
1/4 cup almond milk, or milk of your choice
1/2 Granny Smith apple, grated
EXTRAS
granola or raw buckwheat for some crunch
berries or fruit of choice
Method
THE NIGHT BEFORE:
Chia Pudding
In a small container whisk together the milk, chia seeds, maple syrup, blue spirulina and salt. Leave for a minute, whisk again, leave for another minute and repeat. This will help the chia pudding to set evenly and not in clumps.
Bircher Oats
Mix the OMG porridge, coconut yoghurt and milk in a medium bowl, cover and set overnight.
THE NEXT MORNING:
Grate the Granny Smith apple, add to the bircher mix and stir well. Divide the bircher mix in half, add one half to the bottom of a tall glass of bowl. Then add some chia pudding to the middle, followed by the last of the bircher mix. Top with some granola and berries.
