Figgin great Bircher Muesli

 

SERVINGS: 2 large servings

COOKING TIME: 10 Minutes the day before, leave overnight.

PREP TIME: 10 Minutes

TOTAL TIME: 20 Minutes


Ingredients — Serves 2

CHIA PUDDING

  • 1/4 cup chia seeds

  • 1 cup almond milk, or milk of your choice

  • 2 teaspoons maple syrup

  • 1 teaspoon cinnamon

  • pinch of salt (optional)

BIRCHER MUESLI

  • 1 cup Remedy Kitchen Omega Porridge

  • 3/4 cup apple juice

  • 1/2 cup yogurt

  • 1 Granny Smith apple, grated and added before serving

EXTRAS

  • 1/4 cup granola

  • 2 figs

  • raspberries and cherries

  • maple syrup


Method

THE NIGHT BEFORE:

Chia Pudding

In a small container whisk together the milk, chia seeds, maple syrup, cinnamon and salt. Leave for a minute, whisk again, leave for another minute and repeat. This will help the chia pudding to set evenly and not in clumps.

Bircher Oats

Mix the Omega porridge, apple juice, and coconut yoghurt in a medium bowl, cover and set overnight.

THE NEXT MORNING:

Grate the Granny Smith apple, add to the bircher mix and stir well. Divide the bircher mix into four, add one half to the bottom of two jars or glass. Then add some chia pudding to the middle, with a few raspberries and cherries, add the last of the bircher mix. Top with some granola and cherries.
