Nutty for Nectarines

Ingredients — Serves 6

Porridge

  • 1 cup Remedy Omega Porridge

  • 2 cups almond milk

  • 2 tablespoons coconut yogurt

Toppings

  • 3 x nectarines

  • 2 scoops of Seed Cycle, I used phase 2, sesame and sunflower

  • 4 tablespoons almond nut butter

  • 1/4 cup pecans

  • 1/4 cup pomegranate seeds

  • Honey to drizzle over. I used Some Cafe, honey.


Method

Step 1

Wash and slice the nectarines into fine bite size pieces. Lightly toast the pecans in a fry pan for a few minutes. This will draw out the inherent flavour which also helps aid with digestion. Once you have tried this you’ll never look back. It’s definitely worth taking a few minutes to do this step.

Step 2

Place 1 cup of Omega porridge and 2 cups of almond milk into a small saucepan. Stir constantly on a medium to low heat until you have your desired consistency. Add coconut yoghurt, stir well. Divide between two bowls, add the nut butter, seeds, pecans, pomegranate and honey.
