Mulled Cherry Porridge

When cherries are in season we celebrate!

Ingredients — Serves 6

Cherry Compote

  • 3 cups cherries

  • 1/4 cup coconut sugar

  • 2 tablespoons orange juice

  • 1 teaspoon almond extract

  • 1 teaspoon orange zest

    Cornflour Mix (to thicken the compote)

  • 1 1/2 tablespoons cornflour

  • 1 1/2 tablespoons water

    Remedy Oats

  • 1 cup Remedy Kitchen Omega Porridge

  • 2 cups almond milk

    Toppings

  • 1/4 cup almonds

  • 1/4 cup pistachios

  • 1 orange, cut into small segments

  • 2 tablespoons raw buckwheat

  • sprinkle of cinnamon


Method

Cherry compote

Wash the cherries, cut in half and de-pit. Place in a medium size saucepan with the coconut sugar, orange juice, almond extract and orange zest. Cook over a medium heat for 10-15 minutes, staring occasionally, until the cherries have softened. While they are cooking, prepare the starch mix. Stir the corn flour and water together to create a paste. Once the cherries are soft add the cornflour paste and cook for 30 seconds. This will help thicken the compote to a thick syrupy consistency. If making this on the morning of, you can enjoy having the cherry compote warm with your breakfast. Otherwise you can store this in an airtight container for 7 days.

Porridge

Place 1 cup of Remedy porridge and 2 cups of almond milk into a small saucepan. Stir constantly on a medium to low heat until you have your desired consistency. Divide between two bowls, add the cherry compote, orange segments, nuts, buckwheat and a sprinkle with a dusting of cinnamon. Enjoy x
