Corn Fritters

Ingredients — Serves 15

  • 1/3 cup Remedy Kitchen Superb Seasoning Mix, also available in gluten free

  • 3/4 cup self raising flour - or chickpea flour, almond meal or gluten free flour

  • 400g corn, either fresh or tin, drained well

  • 4 spring onions, sliced

  • 2 eggs, lightly beaten

  • 1/3 cup milk, I used oat milk

  • 1/2 teaspoon baking powder

  • extra virgin olive oil for frying

TOPPINGS OR SERVING SUGGESTIONS

  • sour cream and chives

  • bacon

  • salmon and dill

  • green side salad

  • sriracha mayo

  • Tzatziki

  • salsa

  • Cholula sauce

  • Greek yoghurt

  • avocado


Method

Step 1

In a large mixing bowl combine the superb seasoning mix, self raising flour, baking powder, corn and spring onions. In a separate bowl whisk the eggs and milk. Add the wet ingredients to the dry, stir to combine.

Step 2

In a large frypan add a generous amount of EVOO, covering the base. Heat to a medium to low temp. There are no rules when it comes to fritter size. I made each fritter with a 1/4 cup of mixture, cooking each side for 2-3 minutes, or until golden. Once cooked I like to pop them on some paper towel to soak up the extra oil before serving.

These scrummy treats are truly such a fun way to cook. Whether you’re entaining or just needing some dinner inspiration, you simply can’t go wrong with recipe. Another thing I love is, all the different additions you can add when serving these as a meal or a nibble. From a side salad, sour cream and chives, bacon, salsa and avocado, Tzatziki, sweet chilli or Cholula just to name a few! Super simple, super quick, super tasty.
