Chicken Tenders Salad

Ingredients — Serves 4

CHICKEN TENDERS

  • 1kg chicken tenderloins

  • 1 1/2 cups Remedy Kitchen Superb Seasoning Mix

  • 5 tablespoons olive oil

SALAD

  • mixed lettuce leaves, washed and spun dry

  • 1 punnet cherry tomatoes, washed and cut in half

  • 1 cucumber, washed and grated into long strips

  • 1 avocado, cut in half and sliced

  • handful of continental parsley, chopped finely

SAUCE

  • 1/2 cup kewpie mayonnaise

  • 1 teaspoon Sriracha Hot Chilli Sauce (2 teaspoons if you like it really spicy)


Method

Step 1

Wash, chop, and prepare all the salad ingredients prior, including the sriracha sauce. Set aside while you cook the chicken.

Step 2

Add the Superb Seasoning Mix to a dish, toss the tenderloins to coat. In a large fry pan add the EVOO, heat the pan to a medium to low heat. You may have to cook the tenderloins in two batches so they aren’t over crowded in the pan. Cook for 4-5 minutes each side, or until golden. Drain on paper towel.

Step 3

I’m personally absolutely obsessed with large, low serving platters. In my opinion one simply can’t have enough, they are such a beautiful way to present all your hard efforts in the kitchen. When plating up I like to always start with the the lettuce leaves, followed by the cucumber and cherry tomatoes. Lastly, the chicken, avocado and parsley. If the whole family is a fan of the Sriracha sauce you can drizzle it over the top or leave it on the side. This fresh, tasty chicken salad will have you lining up for seconds!
