Well ain’t that just peachy!

PREP TIME: 15 Minutes

TOTAL TIME: 25 Minutes


Ingredients — makes 12

  • 3 x large peaches

  • 250g haloumi, drain and pat dry, cut in half then cut into bite sized squares

  • 1/4 cup Remedy Kitchen Superb Seasoning Mix

  • 2-3 tablespoons of water

  • 12 x basil leaves, washed

  • 1-2 tablespoons EVOO

  • Balsamic glaze to drizzle over


Method

Step 1

Wash the peaches and basil. Cut each peach into quarters. Set aside.

Step 2 

Dry haloumi, cut in half then into bite sized squares. Combine the Superb Seasoning Mix with water to create a pourable paste. Rub the haloumi in the paste. Heat a grill pan to a medium heat, add the EVOO, and cook the haloumi on each side for about 4 minutes or until you have lovely golden grill marks.

Step 3 

On a serving platter place the peaches first and then the basil. Use a toothpick to pierce the haloumi into the basil and peach. Finish off with a drizzle of balsamic.
