Popcorn Chicken

 

MAKES: Shared plate

COOKING TIME: 20 Minutes

PREP TIME: 15 Minutes

TOTAL TIME: 35 Minutes


Ingredients —

Popcorn chicken

  • 1kg chicken tenderloins

  • 1 cup Remedy Kitchen Superb Seasoning Mix

  • 1 cup panko breadcrumbs

  • 1/4 cup EVOO

    Dipping Sauce

  • 3/4 cup kewpie mayo

  • 2 teaspoons of Sriracha, depending on how much spice you like

  • 2 shallots, washed and trimmed finely for garnish


Method

Chicken prep

Cut the chicken into half inch square bites. In a large bowl toss the chicken, Superb Seasoning Mix and panko. Stir well to make sure the chicken is coated evenly. Lastly, pour over the EVOO and mix again.

Air fry

When placing the chicken in the air fryer be sure to leave a little space around each piece of chicken so it can cook evenly and get a nice golden crunchy edge. Cook on 200 degrees for 9 minutes. This time will vary depending on the type of air fryer you have and the size of the chicken bites. My top tip is to take the largest piece out and cut it in half. If there’s no pink then it’s ready for eating.

Stove Top

For those who are cooking in a frypan, add a generous coating of oil over the base of the frypan and heat to a low to medium heat. You want a little sizzle to get the golden outer edge but you don’t want to burn the seasoning. This process may be a fraction faster. Cook for 6-7 minutes, moving them around gently for an even cook.

Plate Up

There’s so many ways you can plate up and serve these tasty morsels. Today I have used a medium sized serving bowl with toothpicks and a dipping sauce for entertaining the masses!
