Some Salad

This dish was created and inspired by the beautiful products at Some Cafe, Collector NSW! 

 

SERVINGS: 2 Main meals or 4 to share as a side dish

COOKING TIME: 10 Minutes

PREP TIME: 15 Minutes

TOTAL TIME: 25 Minutes


Ingredients — Serves 4

  • 180g halloumi, pat dry, cut in half, then into triangles

  • 120g smoked salmon, tear into bite size pieces

  • 4 baby beets, cut into quarters

  • 100g mixed lettuce, washed

  • 1 avocado, cut into large cubes

  • 1 cucumber, sliced into strips

  • 1/4 cup dill, washed and sprinkled over to garnish

  • 1/4 cup parsley, washed and sprinkled over to garnish.

HALLOUMI RUB

  • 3 tablespoons honey from Some Cafe

  • 2 tablespoons Remedy Kitchen Superb Seasoning Mix

GARNISH

  • 1 tablespoon of dukkah, I have used Some Cafe Dukkah

  • squeeze of lemon juice


Method

Step 1

Wash and prep all the salad ingredients first.

Step 2

Pat the halloumi dry, cut in half, then into triangles. Mix the honey and seasoning mix together. If the mix is too thick to pour, you can gently heat it through to create a more fluid consistency. Pour over the sliced halloumi, you may find the paste will take a bit of massaging to cover the halloumi well. Grill each side for 4 minutes or until you get lovely golden stripes.

Step 3

When plating up I like to start with the the lettuce leaves and salad ingredients first. Followed by the salmon, halloumi, a squeeze of fresh lemon juice and the final touch is to garnish with dukkah.
