Fun-Guy Pasta
No meat Monday!

Ingredients — Serves 4
300g pasta, I’ve used Fiocchetti 6 Sapori bow tie pasta from Carazita
1/4 cup Remedy Kitchen Superb Seasoning Mix
500g mushrooms, washed and cut into quarters
250g spinach
2 tbsp Goldi Punchy EVOO, made right here in Australia
GARNISH:
1 tbsp Gewürzhaus Bruschetta Blend
1/4 cup Parsley
Method
Step 1
Cook the pasta according to the packet instructions. Remember to reserve 1 generous cup of the pasta water to add later.
Step 2
Wash the spinach, parsley and mushrooms. Cut the mushrooms into quarters or slice, it’s a personal preference.
Step 3
Heat a large fry pan to a medium heat, add the Goldi EVOO, toss mushrooms until crisp and golden. Stir in the seasoning mix to coat the mushrooms and add the spinach. Once it has wilted add the cooked pasta and toss. It is at this stage that I add the reserved pasta water to create a creamy soft consistency.
Step 4
Time to plate up. I like to garnish with parsley and the bruschetta blend, or you can sprinkle some chilli flakes to add some heat!
Another personal favourite that you can try is adding some sun-dried tomatoes!
