Roast Chicken Marylands

 

SERVINGS: 4 Large servings… a hearty meal for a cold winters night!

PREP TIME: 15 Minutes

TOTAL TIME: 60-65 Minutes


Ingredients — Serves 4

  • 4 chicken marylands

  • 1 cup Remedy Kitchen Superb Seasoning Mix

  • 3 tablespoons olive oil

  • 3-4 garlic cloves

  • 1 lemon peel, skin only

  • fresh springs of thyme and rosemary


Method

Step 1

Preheat your oven to 180 degrees fan forced. Prep a large roasting dish.

Step 2

Coat the chicken marylands in Superb Seasoning Mix. My favourite little no mess trick is to use a zip-lock bag to coat the chicken. I also only do one at a time, this will make sure each maryland has a generous coverage.

Step 3

Roast for anywhere between 45-50 minutes, timing will vary depending to the size and weight of the marylands. You’ll know the marylands are cooked when the skin is golden and crispy and the juices run clear when you pierce the meat with a knife point. If the juices are pink return to the oven for another 10 minutes.

Step 4

Time to plate up! Whether you choose to accompany these with mash potatoes and peas for a Sunday night roast without the hours of cooking, or served with some coleslaw and sweet potatoes, you simply can’t go wrong.

I love how these Remedy family favourites are all done with a one stop canister. You don’t need to have eleven secret herbs and spices in the pantry to bring this dish together… just a bit of Superb Seasoning Mix!
