Crispy Potato Wedges

COOKING TIME: 25 Minutes air-fryer, 45 minutes oven roasted

PREP TIME: 15 Minutes

TOTAL TIME: 40 Minutes air-fryer, 60 minutes oven roasted


Ingredients- Serves 4

  • 1kg medium sized potatoes

  • 3/4 cup Remedy Kitchen Superb Seasoning Mix

  • 2-3 tablespoons olive oil

TOPPING SUGGESTIONS

  • fresh herbs like thyme or rosemary

  • 1/4 cup parmesan cheese

  • sour cream and chives

  • guacamole

  • salsa - tomato, Spanish onion, avocado and coriander


Method

Step 1

Preheat the oven to 180 degrees fan-forced. Line a large roasting dish if using the oven.

Step 2

Wash and cut each potato into half, then into quarters. I have chosen to leave my potato skins on. Personally, I love the extra crunchy layer and of course the all the nutritional benefits, but, there’s no rules at all. In a large bowl, toss the potatoes in the Superb Seasoning Mix with olive oil. Place in one even layer across the baking dish or air-fryer shelves.

Oven Cooking- Cook for 40-45 minutes, or until golden and soft all the way through.

Air-fryer- Cook for 25 minutes. Times may vary due to the potato size and different air-fryers.

Step 3

Munchie time… I’ve kept it simple with a garnish of fresh thyme, chives and grated parmesan. If you’re after a plant based option, you can’t go past guacamole or salsa!
If you don’t have any potatoes, you could use sweet potatoes, parsnip or zucchini! Use up what’s in the fridge, it’s all about zero waste and loving this beautiful planet. Go us…Saving the planet one wedge at a time!
