Cookie Dough Chocolate Slice

Ingredients

BASE

  • 1 1/2 cups Milled Oat Porridge (MOP)

  • 1 cup almond meal

  • 1/4 cup sea salt

  • 3/4 cup peanut butter or a nut butter of your choice

  • 3/4 cup maple syrup

  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate chips

TOPPINGS

  • 1 cup chocolate chips - vegan chocolate or chocolate of your choice

  • 1 tablespoon coconut oil


Method

Step 1

Line a 9x9 inch square baking tin with baking paper.

Step 2

In a large bowl combine the dry ingredients - milled oat porridge, almond meal and sea salt. Mix and set aside.

Step 3

In a small saucepan on medium to low heat add the peanut butter. Once the peanut butter is soft and warmed through add maple syrup and vanilla extract, mix well and remove from heat.

Step 4

Mix the wet ingredients into the dry, then add choc chips. Press the cookie dough into the prepared pan smooth over and chill.

Step 5

Melt chocolate and coconut oil over a low heat and pour over the cookie dough. Place in the fridge for 2 hours. Now comes the hard part, waiting for the slice to set before cutting into squares!
