Ingredients

  • 2 cups Remedy Kitchen Milled Oat Porridge

  • 1 cup coconut sugar

  • 3/4 cup desiccated coconut

  • 125g butter, melted

  • 1 tablespoon rice malt syrup

  • 2 tablespoons boiling water

  • 1 teaspoon bicarbonate soda


Method

Step 1

Heat the oven to 150 degrees. Line 4 baking trays with baking paper. These bickies will spread a lot while cooking, so you’ll need large trays for extra space.

Step 2

In a large mixing bowl add the MOP oats, coconut sugar, and desiccated coconut. Mix well.

Step 3

In a small saucepan add the butter and rice malt syrup. Stir over a low heat until the butter is melted. Combine the bicarbonate soda and water, add to the butter mixture while warm. Mix the wet ingredients into the dry.

Step 4

Roll into 1/2 tablespoon size balls, place about 4cm apart to allow room to spread. Bake for 13-15 minutes or until golden. Allow to cool completely on the baking tray… if you can wait that long!
