Passion Porridge

Ingredients — Serves 2

PORRIDGE

  • 1 cup Remedy Kitchen Milled Oat Porridge

  • 2 cups milk of your choice, I used coconut milk

  • 1 tablespoon coconut yoghurt

  • 1 vanilla pod (optional), cut in half and scrape out the seeds. Or, a little vanilla extract.

TOPPINGS

  • 2 passionfruit

  • dollop of raspberry chia jam, you can find my recipe in the extras section.

  • 1/4 cup macadamias

  • sprinkle of shredded coconut

  • drizzle of maple syrup if you need a little sweetening


Method

Step 1

In a small saucepan combine the MOP oats, milk and vanilla seeds. I know vanilla pods aren’t always in the pantry, but the flavour is sensational if you do happen to have one on hand. Stir on a medium to low heat until the porridge thickens to your desired consistency. Turn heat off, stir in yoghurt.

Step 2

Top with passionfruit, raspberry chia jam, macadamias, coconut and a drizzle of maple syrup!
