Rum Balls

Ingredients — Serves 20-24

  • 1 3/4 cups/200g of Remedy Kitchen Porridge, either Milled Oat or Omega Porridge

  • 14 scoops Phase 1 Seed Cycling + Protein

  • 10 dates, pitted and soaked in boiling water

  • 1/2 cup/65g of cashew pieces or granulated peanuts

  • 1/2 cup/80g sultanas

  • 1 tps vanilla bean paste

  • 1/2 cup/145g rice malt syrup

  • 6 teaspoons rum

  • 1 cup dessicated coconut to coat


Method

Step 1 

Soak dates in boiling water for 10 mins to soften. After soaking, remove the pit and outer skin from the dates to help create a smoother texture. Then, chop into small pieces. 

Step 2

Add the porridge and seeds to a food processor and mill for a fine consistency. Then, add the rest of the ingredients (except for the desiccated coconut) and mix well.

Step 3

Roll into tablespoon size balls and coat in desiccated coconut. Seal in an airtight container and refrigerate.
