Strawberry Matcha Oaty Parfait

Ingredients — Serves 2
Strawberry Coulis
500g strawberries
1/2 cup coconut sugar
juice from one lemon
Strawberry Coulis Overnight Oats
1 cup Remedy Oats, either Milled Oat Porridge or Omega Porridge
1 cup coconut yoghurt
1 cup of strawberry coulis for the sweet at heart or you could do 1/2cup of almond milk & 1/2 cup of coulis.
Matcha Chia Pudding
1 cup almond milk
1/4 cup chia seeds
1 tablespoon matcha, I used the brand Love Tea
Extras
1 cup coconut yogurt
1 cup fresh strawberries, washed and quartered depending on size.
Strawberry Coulis method:
Wash and cut the berries into quarters. Place the berries, coconut sugar and lemon juice into a small saucepan. Simmer over a medium to low heat with the lid on for 10 minutes, stirring frequently until the berries have softened and broken down. Pour into a blender and puree until smooth. This can be made in advance and is best stored in the fridge.
Chill before adding to the overnight oats.
Strawberry Coulis overnight oats method:
Mix together the Remedy oats, coconut yoghurt and strawberry coulis in an airtight container. Refrigerate overnight.
Matcha Chia Pudding Method:
In a large bowl whisk together the almond milk, chia seeds, and matcha. Whisk twice more after 60 second intervals to prevent the chia seeds from clumping together. Pour into a sealed container and refrigerate for at least 4 hours.
METHOD… the next day!
With plating up this dish I like to use glass dessert bowls so you can see all the layers. Firstly, add the overnight oats with a generous amount of freshly cut strawberries to top, followed by some coconut yoghurt, and finish off with the matcha chia pudding. Additionally, you can decorate the top for that extra wow factor! This is a fresh, healthy way to start the day.
