Weekends are for Waffles!

 

SERVINGS: 6 depending on the size of your waffle maker

Ingredients

WAFFLES

  • 2 cups Remedy Kitchen MOP or OMG Porridge, mill to a fine consistency

  • 2 eggs

  • 1 1/2 cups of almond milk or milk of your choice

  • 3 tablespoons maple syrup

  • 3 tablespoons butter

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • spray oil

TOPPINGS

  • 3/4 cup toasted pecans

  • 1/2 cup toasted shredded coconut

  • 1 banana

  • 1 cup strawberries


Method

Step 1

Add the porridge to a food processor and mill until it has a flour like consistency, set aside.

In a large bowl add the milk, eggs, maple syrup, butter, vanilla extract, baking powder, and salt. Whisk until combined then add milled porridge. Stir to combine.

Step 2

Heat waffle maker. Once heated, spray with oil to prevent the waffle from sticking. I add a 1/2 cup of waffle batter, but this may vary depending on the size of your waffle maker. Cook until your waffle is golden brown and crisp!

Step 3

Top with seasonal fruit, toasted nuts, coconut, nut butters, chocolate and the all time crowd pleaser, maple syrup! Remember there’s no rules with toppings for these delicious treats, but they are definitely worth the effort!

Lastly, you will notice these waffles might not be as fluffy and light as your average waffle… but by cutting out the ultra processed naughties you don’t have to feel guilty when having more than one!
