Superb Chicken Burger

Ingredients — Serves 4

  • 4 chicken thigh fillets, one per burger

  • 1 cup Remedy Kitchen Superb Seasoning Mix

  • 4 brioche burger buns

  • 4 slices Swiss cheese

  • 2 tomatoes, sliced

  • small cos lettuce, 8 small leaves, two per burger

  • 1/4 spanish onion, finely sliced

  • extra virgin olive oil, for frying'

SAUCE

  • 1/2 cup kewpie mayonnaise

  • 1 teaspoon Sriracha Hot Chilli Sauce (2 teaspoons if you like it really spicy)


Method

Step 1

Coat the chicken thigh fillets in Remedy Kitchen Superb Seasoning Mix. My favourite little no mess trick is to use a zip-lock bag to coat the chicken. I also only do one fillet at a time, this will make sure each thigh fillet has a generous layer of Superb Seasoning Mix.

Cooking options

Frypan: add a generous layer of oil to cover the bottom of the pan, heat to a medium to low heat. Cook each side for approx. 6 minutes, depending on the size of the thigh fillet.

Air-fryer: I like to use a spray oil to each side of the seasoned chicken before adding to the air-fryer. Cook for approx. 10-15 minutes at 180 degrees, depending on size.

Step 2

Wash and cut the lettuce, tomatoes and onion. Mix together the kewpie mayo and sriracha sauce, be sure to taste test, as you can always add a little extra sriracha for the spicy at heart!

Step 3

When building my burger I love having the cheese melt over the warm chicken before adding the fresh ingredients!

I firmly believe a burger should always be accompanied by a scrummy hot chip. Just like you wouldn’t have your bangers without your mash!
